Product used:


  • 2 Tablespoons Coconut Oil

  • ½ Cup Almond Flour

  • 450gm /16 Ounces Fat free Cottage Cheese – 454g

  • 300gm fat free Greek Yogurt

  • 1 Large Whole Egg

  • 2 Large Egg Whites

  • 1 vanilla bean, split and scrapped

  • 1/4 Cup clear honey

  • Fresh raspberries


Serves 6 portions

Melt the coconut oil and mix with the Almond Flour in a bowl

Line a 3 x 3 inch cake pan or 1 x 9inch cake pan with parchment paper, and press mix into the base

Bake the crust at 176C/350’F for 12-15 minutes or until it’s lightly browned

Meanwhile In another bowl, mix together the remaining ingredients accept for the fresh raspberries till smooth

Pour mix on top of the crust.

Place into the oven and bake cheesecake for 30-35 minutes (160’C / 345F) , drop your temperature to 95’C/200’F and continue baking for another 50 minutes-1 hour

Remove cheesecake, let it cool for several hours before toping it with fresh raspberries
